Newsletter 6 of 2025

Another newsletter of 2025! I began covering a few more diets and compiled a list of 2025s top ten diets in my last blog. As previously mentioned, I do not plan on writing the diet-type blogs consecutively. Maintaining the right weight or losing weight will always be a major topic in the world of nutrition. I like to keep a mix of subjects as I write, and dieting will be referred to or made as the main topic from time to time.

Some people can develop a super nutrient-rich diet that lasts a lifetime, while for the rest of us, dieting is a struggle. In my own personal confession, I think it is sometimes a struggle. Sometimes when you get started into a diet and make yourself stay committed, it make it a little easier for your mind to have its own triggers and flags when it comes to eating. Because of that, you gained a greater knowledge and awareness of the guilt you would feel if you kept a poor diet for a prolonged time. However long a period people might “take a break” from dieting, I encourage everyone to hop back on the healthy bus!

Mediterranean Quinoa Salad

Ingredients:
1 cup cooked quinoa
1/2 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup Kalamata olives, sliced
1/4 cup crumbled feta cheese
Juice of 1 lemon
2 tbsp olive oil
Salt and pepper to taste
Instructions:
In a large bowl, combine all ingredients.
Toss with lemon juice and olive oil.
Chill for 30 minutes before serving.
Nutritional highlights: Rich in fiber, protein, and antioxidants.

Salmon Piccata

Salmon Piccata Method: Pan-Seared
Time: 25 minutes
Servings: 4 but I cooked for one on this occasion
ingredients:
* 4 salmon fillets (skinless)
* Salt and pepper
* 2 tablespoons olive oil
* 3 tablespoons unsalted butter
* 3 garlic cloves, minced
* 1/3 cup dry white wine or chicken broth
* 1/4 cup lemon juice
* 2 tablespoons capers
* 1 tablespoon chopped parsley
Instructions:
1. Season salmon with salt and pepper.
2. Heat olive oil in a skillet over medium heat. Sear salmon 3–4 minutes per side. Set aside.
3. In the same skillet, melt 1 tbsp butter. Sauté garlic for 1 minute.
4. Add wine, lemon juice, and capers. Simmer for 2–3 minutes.
5. Swirl in remaining butter. Return salmon to pan for 1 minute to coat with sauce.
6. Garnish with parsley. Serve with pasta or rice.

No Bake Cottage Cheese Blueberry Cheesecake

Ingredients:
2 cups of cottage cheese
1 cup of Greek yogurt
1/2 cup of sugar-free maple syrup
1 tsp vanilla extract
1 tbsp lemon juice
2 tsp gelatin or agar agar
Crust:
1 cup of shredded graham crackers0
2 tbsp coconut oil
Directions:
1. Blend cottage cheese, then blend all ingredients together. 2. Mix graham crackers and coconut oil separately than press to bottom of pie pan. 3. Pour cheesecake mixture into pan and refrigerate for at least 3 hours. 4. Microwave 1 to 2 cups of frozen blueberries with lime juice (optional). Pour on top of chilled cheesecake.

Turkey Taco Zucchini and Sweet Pepper Boats

Servings: 4 (makes 8 boats)
Time: 40 minutes
Dietary Info: Low-carb, gluten-free, high-protein
Ingredients:
4 medium zucchinis
1 lb ground turkey
1/2 cup diced onion
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp chili powder
1 tbsp paprika
1/2 cup canned diced tomatoes (drained)
1/2 cup black beans (optional)
1/2 cup corn (optional)
1/2 cup shredded cheddar or Mexican blend cheese
Salt and pepper to taste
Fresh cilantro, lime wedges, and avocado for garnish
Instructions:
Prep the zucchinis:
Preheat oven to 375°F (190°C).
Slice zucchinis in half lengthwise and scoop out the center with a spoon to create a “boat.” (Leave about 1/4 inch of flesh around the edges.)
Place boats in a baking dish, lightly salt, and set aside.
Cook the filling:
In a large skillet, heat olive oil over medium heat. Add onion and garlic, cook until soft (about 2–3 minutes).
Add ground turkey and break it up with a spatula. Cook until browned.
Stir in taco seasoning, diced tomatoes, beans, and corn (if using). Simmer for 5 minutes. Season with salt and pepper.
Assemble the boats:
Spoon the taco turkey mixture evenly into each zucchini boat.
Top with shredded cheese.
Bake:
Cover with foil and bake for 25 minutes. Uncover and bake an additional 5–7 minutes until cheese is bubbly and golden.
Serve:
Garnish with fresh cilantro, a squeeze of lime, and sliced avocado or sour cream.
