Hello everyone, and welcome to Newsletter 6 of 2025! These past few weeks have been interesting and I have enjoyed cooking a few of my recipes. I especially enjoyed making the carrot cake from scratch. I remember the days of making boxed cake, and gone are those days. Fresh and wholesome ingredients are by far so much better than that processed mix. I’m so happy to have learned a few great recipes along the way of my health journey.

Sweet Potato with Yogurt Breakfast

Ingredients

1 cup of Greek yogurt

2 tbsp brown sugar (I used truvias sugar free)

cinnamon and nutmeg sprinkles

1 tbsp sugar free maple syrup

1 sweet potato

Instructions:

1. Microwave sweet potato

2. Combine and stir all other ingredients into a bowl.

3. Top sweet potato with combined ingredients.

Healthy Carrot Cake with Zucchini & Apple

Ingredients

Dry Ingredients:

  • 1 ½ cups oat flour (or whole wheat flour)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt

Wet Ingredients:

  • 2 large eggs
  • ½ cup unsweetened applesauce
  • ⅓ cup maple syrup, honey, or monk fruit syrup
  • ¼ cup melted coconut oil or avocado oil
  • 1 tsp vanilla extract

Fresh Add-ins:

  • 1 cup finely grated carrots
  • ½ cup grated zucchini (squeeze out excess moisture)
  • ½ cup grated apple (no need to peel)

Optional Add-ins:

  • ¼ cup chopped walnuts or pecans
  • ¼ cup raisins or chopped dates

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 pan or line with parchment paper.
  2. In a large bowl, whisk together all dry ingredients.
  3. In another bowl, mix the wet ingredients until smooth.
  4. Stir wet ingredients into dry ingredients until just combined.
  5. Fold in:
    • grated carrots
    • zucchini (squeezed dry)
    • grated apple
    • any optional add-ins
  6. Pour batter into prepared pan and spread evenly.
  7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool completely before slicing or frosting.

Optional Healthy Frosting

Light Cream Cheese Frosting:

  • 4 oz cream cheese
  • ¼ cup Greek yogurt
  • 2–3 tbsp monk fruit sweetener or honey
  • ½ tsp vanilla

Mix until smooth and spread on cooled cake.

Lettuce Wrap Beef Taco

I did use some grass-fed organic beef. It’s a little pricier, but much better for your body!

Ingredients:
1 small chopped onion or ½ large onion
1tbsp garlic
1 tbsp olive oil
½ tsp paprika
½ tsp chili powder
½ tsp cumin
salt and pepper

Toppings:
head of lettuce
(your own choice, but some recommended)
chopped tomatoes
chopped avocados
cilantro
shredded cheese

Chipotle Lime Sauce
juice of 1 lime
lime zest
½ cup sour cream
1 tsp chipotle seasoning

Instructions:
Sauté the onion, then add ground beef.
Add seasonings
Cook until browned
Add cooked beef in a few lettuce leaves.
Add the toppings
Add the sauce.
