Sweet Potato Gingerbread Loaf
Makes: 1 loaf
Pan: 9 × 5-inch loaf pan
Bake: 350°F for about 45–55 minutes
Ingredients
- 1 cup mashed cooked sweet potato, completely cooled
- ½ cup Medjool date paste
- ¼ cup brown sugar substitute
- 3 large eggs
- ⅓ cup olive oil
- 1 tsp vanilla extract
- 1½ cups almond flour
- 1 tsp baking soda
- 1½ tsp ground cinnamon
- 1½ tsp ground ginger
- ½ tsp nutmeg
- ¼ tsp ground cloves
- ¼ tsp salt
- ¼ cup unsweetened almond milk
Directions
- Preheat oven to 350°F. Line a 9×5-inch loaf pan with parchment paper.
- Whisk the mashed sweet potato, date paste, brown sugar substitute, eggs, olive oil, and vanilla until smooth.
- In another bowl, combine the almond flour, baking soda, spices, and salt.
- Gradually mix the dry ingredients into the wet ingredients.
- Stir in the almond milk. The batter should be thick and moist but easily spreadable.
- Pour into the loaf pan and smooth the top.
- Bake for 45–55 minutes, checking around 45 minutes. A toothpick should come out with a few moist crumbs but not wet batter.
- Let the loaf cool in the pan for 15–20 minutes, then transfer it to a rack.
- Allow it to cool completely before slicing. This is particularly important with almond-flour baking.
Cheesy Stuffed Jalapeño Chicken Boats
If you enjoy a little heat, these stuffed jalapeño chicken boats are a healthier alternative to traditional stuffed jalapeño appetizers. Jalapeños provide plenty of flavor while lean chicken and vegetables make this dish satisfying enough for dinner.
Ingredients
Serves 2
- 4 large jalapeños
- 1 cup cooked shredded chicken
- ¼ cup finely diced red bell pepper
- 2 tablespoons finely diced red onion
- 2 tablespoons plain Greek yogurt
- ¼ cup shredded cheddar or Monterey Jack cheese
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon cumin
- Salt and black pepper to taste
- 1 tablespoon chopped fresh cilantro, optional
Directions
- Preheat the oven to 400°F.
- Carefully slice the jalapeños lengthwise. Remove the seeds and membranes. For a milder dish, remove all of the seeds.
- In a bowl, combine the shredded chicken, bell pepper, red onion, Greek yogurt, cheese, garlic powder, smoked paprika, cumin, salt, pepper, and cilantro.
- Spoon the chicken mixture into the jalapeño halves.
- Arrange the stuffed jalapeños on a parchment-lined baking sheet.
- Bake for 15–20 minutes, until the jalapeños are tender and the cheese is melted.
- Allow them to cool for several minutes before serving.
Maple Cinnamon Cheesecake Stuffed Baked Apples
Servings: 4
Prep Time: 15 minutes
Bake Time: 30–35 minutes
Total Time: About 50 minutes
Ingredients
For the Apples
- 4 medium apples, such as Honeycrisp, Gala, Fuji, or Granny Smith
- ⅓ cup water
- 1 teaspoon lemon juice
For the Cheesecake Filling
- 5⅓ ounces cream cheese, softened
- ⅓ cup plain Greek yogurt
- 2 tablespoons sugar-free maple syrup or pure maple syrup
- ¾ teaspoon vanilla extract
- ¾ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- 1½ tablespoons finely chopped pecans
- 2 teaspoons almond flour, optional
- Small pinch of salt
Optional Topping
- 1½ tablespoons chopped pecans
- 2 teaspoons sugar-free maple syrup
- Light sprinkle of cinnamon
Instructions
1. Prepare the Apples
Preheat the oven to 350°F. Wash and dry the apples. Using an apple corer or small paring knife, remove the core and seeds from each apple, being careful to leave the bottom intact. Create a cavity approximately ¾–1 inch wide. Brush the exposed apple flesh with the lemon juice.
2. Make the Cheesecake Filling
Place the softened cream cheese and Greek yogurt in a medium bowl. Beat until smooth and creamy. Add the maple syrup, vanilla, cinnamon, nutmeg, almond flour if using, and salt. Mix until well combined. Fold in the chopped pecans.
3. Fill the Apples
Place the apples upright in a baking dish. Divide the cheesecake filling evenly among the 4 apples, gently pressing it into the cavities. It’s fine if the filling comes slightly above the top of the apples. Sprinkle with the optional chopped pecans and a little cinnamon.
4. Add Water
Pour ⅓ cup water into the bottom of the baking dish, being careful not to pour it directly over the apples or filling.
5. Bake
Bake uncovered at 350°F for 30–35 minutes, or until the apples are tender when pierced with a fork but still hold their shape. If using particularly large or firm apples, they may require an additional 5–10 minutes.
6. Cool and Serve
Remove from the oven and allow the apples to cool for about 10 minutes. Drizzle with a little sugar-free maple syrup and sprinkle with cinnamon before serving.
