
Happy July and welcome to Newsletter 12 of 2026! I hope you are enjoying your summer so far! I love that it’s not over yet. I’ve recently made myself a delicious garden pasta salad and have the recipe to share with you in this blog! It turned out so delicious. Sometimes pasta isn’t seen as the best meal, but I’d like to remind you that there are many noodle brands out there that have protein pasta, chickpea pasta, and a few other varieties to choose from that don’t make the carb-full dish so bad. There are a few other recipes that I’ve included (Matcha ice cream!) There are also the blog recaps and other great products you should check out.

Creamy Matcha Cashew Ice Cream
This dairy-free recipe is silky smooth with the earthy flavor of ceremonial-grade matcha and the richness of blended cashews.
Ingredients
- 1½ cups raw cashews, soaked for 4–6 hours and drained
- 1 cup unsweetened almond milk
- ¼ cup sugar-free maple syrup
- 2 teaspoons ceremonial-grade matcha powder
- 1 teaspoon vanilla extract
- 1 tablespoon melted coconut oil
- Pinch of sea salt
Instructions
- Blend the soaked cashews, almond milk, sugar-free maple syrup, matcha, vanilla, coconut oil, and sea salt until completely smooth.
- Chill the mixture for about 1 hour.
- Churn in an ice cream maker according to the manufacturer’s instructions, or freeze in a shallow container, stirring every 30–45 minutes until creamy.
- Freeze for an additional 2 hours before serving.
Summer Garden Pasta Salad
Dressing Lemon Herb Vinaigrette
Ingredients
¼ cup extra virgin olive oil
3 tablespoons fresh lemon juice
1 teaspoon honey or sugar-free maple syrup
1 garlic clove, minced
1 teaspoon dried oregano
1 tablespoon fresh chopped parsley
½ teaspoon salt
¼ teaspoon black pepper
Instructions
Whisk all ingredients together until well combined. Pour over the chilled salad and toss
Complete Salad Ingredients
8 ounces protein pasta of choice, cooked and cooled
1 can chickpeas, drained and rinsed
1 cup fresh corn kernels, lightly cooked and cooled
1 cucumber, diced
1 cup cherry tomatoes, halved
1 red bell pepper, diced
¼ cup red onion, finely diced
2 tablespoons fresh dill, chopped
Toss everything together with your dressing of choice and refrigerate for at least 30 minutes before serving.

Smoky Paprika Turkey Meatballs
Tender, lean turkey meatballs seasoned with sweet and smoked paprika are simmered in a simple tomato sauce for a flavorful, protein-packed dinner.
Ingredients
Meatballs
- 1 pound lean ground turkey
- ½ cup whole wheat breadcrumbs
- 1 egg
- ¼ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 teaspoons smoked paprika
- 1 teaspoon sweet paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
Sauce
- 1 (15-ounce) can crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 2 cloves garlic, minced
- ½ teaspoon Italian seasoning
Instructions
- In a large bowl, combine all meatball ingredients except the olive oil. Mix gently and form into 16 meatballs.
- Heat olive oil in a large skillet over medium heat. Brown the meatballs for 6–8 minutes, turning occasionally.
- Add the crushed tomatoes, tomato paste, garlic, smoked paprika, and Italian seasoning to the skillet. Stir gently.
- Cover and simmer for 12–15 minutes, or until the meatballs reach an internal temperature of 165°F.
- Serve over whole wheat pasta, brown rice, zucchini noodles, or spaghetti squash. Garnish with fresh parsley and Parmesan cheese if desired.
