Hello everyone and welcome to my 12th newsletter of 2025! It will be officially fall in 2 days, but I’m already loving all of the fall vibes around me. I will be having more fall recipes coming in the next couple of weeks and am excited to be cooking up some of the traditional and healthy food.
This time of year is typically harder for people to maintain their healthy lifestyle because there are so many delicious- yet not always healthy fall foods available. This is mostly dessert types of food, of course. I have so many recipes in my blogging archives that provide wonderful substitutions to popular desserts, and I continue to plan on baking and sharing more healthy recipes. Sweet Potato Brownies
Recipe
Ingredients (makes 12 brownies):
1 cup mashed cooked sweet potato (about 2 small or 1 large)
2 large eggs
½ cup plain Greek yogurt
½ cup honey or maple syrup (or coconut sugar)
¼ cup olive oil or melted butter
1 tsp vanilla extract
½ cup unsweetened cocoa powder
½ cup flour (all-purpose, oat, or almond flour all work)
1 tsp baking powder
¼ tsp salt
½ cup dark chocolate chips (optional but delicious)
Instructions:
Prep sweet potato – Roast, steam, or microwave sweet potatoes until soft. Mash until smooth and let cool.
Mix wet ingredients – In a large bowl, whisk together mashed sweet potato, eggs, yogurt, honey/maple syrup, oil, and vanilla.
Add dry ingredients – Stir in cocoa powder, flour, baking powder, and salt. Mix just until combined.
Fold in chocolate – If using, gently fold in chocolate chips.
Bake – Pour batter into a greased or parchment-lined 8×8-inch pan. Bake at 350°F (175°C) for 25–30 minutes, or until the center is just set.
Cool & slice – Let cool at least 15 minutes before cutting into squares.
Tips:
For extra fudgy brownies, underbake slightly (they’ll firm up as they cool).
For sweeter brownies, increase honey/maple syrup to ⅔ cup.
For protein brownies, replace ¼ cup of the flour with chocolate protein powder.
Recipe
This one is pretty simple. You can serve with overnight oats or hot oatmeal, but I went with the overnight oats. You simply top with chopped strawberries and crumbled pieces of Legendary Strawberry-flavored pastry. Very nutritious breakfast that is high in protein.
Mediterranean Herb Steak
Recipe
Mediterranean Herb Marinade Ingredients:
1/4 cup olive oil Juice of 1 lemon 2 cloves garlic,
minced 2 tsp dried oregano
1 tsp thyme or fresh leaves of time
1/2 tsp cumin
1/2 tsp sea salt
1/4 tsp black pepper
Instructions: Mix ingredients in a bowl or jar. Add steak to a resealable bag or glass dish.
Pour marinade over, seal, and refrigerate 2–12 hours.
Remove from fridge 30 minutes before cooking.
Grill, broil, or pan-sear to desired doneness.
Peaches and Ice Cream
Recipe:
1 16oz container of cottage cheese
1 16 oz bag of frozen peaches or 3 chopped peaches
3 tbsp sugar free maple syrup
3 tbsp coconut milk
Blend and freeze! enjoy!
