I’ve begun an occasional series about some of the healthiest countries. I started with the 25th healthiest country in the world, according to the 2019 study of the Bloomberg Index. Shrimp Stir Fry
High in Vitamin C which helps your body in so many ways!
Ingredients (2 servings):
16 oz. shrimp
1 cup red bell pepper, sliced
1 cup yellow bell pepper, sliced
1 cup broccoli florets
1/2 cup snow peas
2 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons low-sodium soy sauce
1 teaspoon sesame seeds (optional)
Instructions: Heat olive oil in a skillet over medium-high heat. Add garlic and cook for 1 minute. Add vegetables and stir-fry for 5–7 minutes until tender-crisp. Stir in soy sauce and sprinkle sesame seeds before serving.
Healthy Sweet Potato, Date & Carrot Muffins
Ingredients (makes 12 muffins):
1 cup mashed sweet potato (about 1 medium potato, roasted or steamed)
1 cup grated carrots (about 2 medium carrots)
½ cup pitted Medjool dates (about 6–8), chopped
2 eggs (or flax eggs for vegan: 2 tbsp flaxseed meal + 6 tbsp water)
¼ cup maple syrup or honey
⅓ cup olive oil or melted coconut oil
1 tsp vanilla extract
1 cup whole wheat flour (or oat flour for gluten-free)
½ cup rolled oats
1½ tsp baking soda
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp nutmeg
¼ tsp salt
Optional: ¼ cup chopped walnuts or pecans for crunch
Instructions: Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it. Soften the dates (optional but recommended): Soak chopped dates in hot water for 5 minutes, then drain well. Mix wet ingredients: In a large bowl, whisk together mashed sweet potato, eggs, oil, maple syrup, and vanilla until smooth. Add carrots and dates: Stir in grated carrots and softened dates. Combine dry ingredients: In a separate bowl, mix the flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt. Combine wet and dry: Add the dry mixture into the wet ingredients and stir until just combined. Do not overmix. Fold in nuts if using. Scoop and bake: Spoon batter into muffin cups, filling each about ¾ full. Bake for 20–24 minutes, or until a toothpick inserted into the center comes out clean. Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Spaghetti Spaghetti Squash
Spaghetti squash prep Instructions: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the cut sides with olive oil, and sprinkle with salt and pepper. Place the squash cut-side down on a baking sheet and roast for 30-40 minutes, or until fork-tender. Once cooled slightly, use a fork to scrape the flesh into “noodles.”
Marinara Ingredients:
1 can diced tomatoes
½ chopped onion
1 garlic
3 tbsp olive oil
fresh basil, oregano, salt, and pepper
shredded mozzarella (for later)
Instructions: Add everything except diced tomatoes to the skillet The garlic should be peeled first and cooked with onion and olive oil until softened. Once it is softened, remove cloves from garlic and keep in skillet. Add the diced tomatoes and cook through. When complete, add the marinara to the prepared squash. Top with mozzarella Put in the oven at 350 F for another 15 minutes Enjoy!
Avocado Smores Ice Cream
Ingredients
1 bag frozen Avocados or 4 cut and frozen Avocados
1 cup of greek yogurt (optional)
3 tbsp cocoa powder
1/2 cup of stevia
1/4 cup sugar free chocolate chips
1/2 cup mini marshmallows
1/2 cup crushed graham crackers
Instructions: Blend everything except the smores Ingredients After blending, place in plastic container Add smores Ingredients and stir Put in the freezer Thaw and enjoy!
