
The joys of June. So many fun activities and June recipes! This is personally one of my favorite months of the year. It is when summer has just begun and it isn’t the hottest. It feels refreshing and the sunshine is more appreciated. It is the season for grilling, picnic salads, ice-cream, and popsicles! Pineapple Green Smoothie
No extra sugar needed!
16 Oz frozen Pineapple
2 handfuls of Spinach
*note: blend these before adding
Half Avocado
Full sliced apple
Half lemon with rind
Enjoy!
Summer Garden Salad (recipe in video)
Creamy Tuscan Chicken
Ingredients:
2 large chicken breasts (halved lengthwise)
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup heavy cream
1/2 cup chicken broth
1/4 cup grated Parmesan
1/2 cup sun-dried tomatoes (drained)
1 cup fresh spinach
Salt and pepper
Instructions:
Season chicken with salt and pepper. Cook in a skillet with oil until golden and cooked through. Remove and set aside.
In the same pan, sauté garlic, then add cream, broth, and Parmesan. Simmer until thickened.
Stir in sun-dried tomatoes and spinach until wilted. Return chicken to pan and spoon sauce over it. Serve hot.
Coconut Energy Balls
Ingredients:
1 cup rolled oats
½ cup natural peanut butter or almond butter
⅓ cup honey or sugar free maple syrup
½ cup unsweetened shredded coconut
1 tsp vanilla extract
1 tbsp. flaxseed
Optional: mini chocolate chips, chia seeds, or ground flaxseed
Instructions:
Mix all ingredients in a bowl until well combined.
Chill mixture for 15–20 minutes, then roll into balls.
Store in the fridge for up to a week.
Why it’s healthy: Great source of fiber, healthy fats, and protein. No refined sugar.
