6 Summer Salads

I’ve got a great summertime treat for you today! I have a combination of recipes of different types of summer salads. All of which are nutrient-rich and healthy for you! If you are attending any type of family, church, club, or group picnic this year, these are some great side salads to bring. Can be made for a more personal and smaller picnic too! Besides the high-fat hamburgers, hot dogs, fried chicken, and potato chips that people usually bring, you can offer a healthy option! I made the peach and blueberry salad just the other day, and it tastes so wonderful! All of the options are very taste bud friendly, try them out!

Melon Trio Salad

Ingredients:

Watermelon

Cantaloupe

Honeydew

Lime zest

Mint or basil leaves

Instructions:
Scoop melons into balls or chunks. Add lime zest and herbs for freshness.

Peach and Blueberry Salad

Ingredients:

Fresh peaches (sliced)

Blueberries

Sliced almonds

Honey + cinnamon drizzle

Instructions:
Mix fruits, sprinkle almonds, and drizzle with honey and a dash of cinnamon.

Caprese Pasta Salad

🍅 A classic twist on the beloved Caprese. This is one of my personal favorite summer salads!

Servings: 4–5
Ingredients:

8 oz bowtie or rotini pasta

1.5 cups cherry tomatoes, halved

1 cup mini mozzarella balls (or cubed fresh mozzarella)

1/3 cup chopped fresh basil

1 tbsp balsamic glaze (optional but tasty)

Dressing:

3 tbsp olive oil

1 tbsp balsamic vinegar

1 small clove garlic, minced

Salt & pepper to taste

Instructions:

Cook pasta, rinse with cold water, and drain.

Combine pasta, tomatoes, mozzarella, and basil in a large bowl.

Whisk dressing ingredients and pour over salad.

Toss gently and drizzle balsamic glaze on top if using.

Tips:

Best served fresh or within a few hours.

Try whole wheat pasta or chickpea pasta for added fiber/protein.

Greek Yogurt Ranch Pasta Salad

🥗 Creamy, tangy, and packed with veggies. Servings: 4–6
Ingredients:

8 oz elbow macaroni or small shells

1 cup shredded carrots

1 cup chopped celery

1 cup halved cherry tomatoes

1/2 cup chopped baby spinach

1/4 cup chopped green onions

Dressing:

1 cup plain Greek yogurt

1 tbsp olive oil

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dried dill

1/2 tsp salt (adjust to taste)

Optional: splash of vinegar or lemon juice for extra tang

Instructions:

Cook pasta, rinse under cold water, and cool.

Combine all veggies in a bowl.

In a separate bowl, mix dressing ingredients.

Toss everything together and chill 30–60 minutes before serving.

Tips:

Use low-fat Greek yogurt for fewer calories.

Add diced cooked chicken or turkey for a protein boost.

Quinoa & Roasted Veggie Salad

🥕 Earthy and comforting with warm roasted flavors.

Ingredients:

1 cup cooked quinoa

1 cup roasted sweet potatoes, diced

1/2 cup roasted zucchini

1/2 cup roasted red peppers

1/4 cup chopped spinach or arugula

Dressing:

2 tbsp balsamic vinegar

2 tbsp olive oil

1 tsp Dijon (optional) or garlic powder

Salt & pepper

Instructions:
Toss quinoa with roasted vegetables and dressing. Serve warm or cold.

Strawberry Spinach Quinoa Salad

🍓 Sweet, tangy, and ideal for spring or summer.

Ingredients:

1 cup cooked and cooled quinoa

1 cup baby spinach

1/2 cup fresh strawberries, sliced

1/4 cup crumbled goat cheese or feta

2 tbsp chopped walnuts or almonds

Dressing:

2 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp honey

Pinch of salt

Instructions:
Gently toss quinoa with spinach, berries, cheese, nuts, and drizzle dressing over.
