Hello everyone, and welcome to Newsletter 8 of 2026! I have the usual blog and recipe recaps and I am excited to share them with you. If you haven’t already read the blogs, fermentation is a mentioned topic often. Fermentation is also a popular process in South Korea and is one reason why South Korea is a high ranking nation for health in the world!

Olive Oil Orange Cake

Ingredients:
Wet Ingredients
2 large eggs
½ cup extra virgin olive oil
½ cup honey or pure maple syrup
½ cup fresh orange juice (about 2 oranges)
Zest of 1–2 oranges
1 tsp vanilla extract


Dry Ingredients
1 ½ cups whole wheat flour (or almond flour for gluten-free)
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
Optional Add-ins
¼ cup Greek yogurt (extra moisture + protein)
¼ cup chopped walnuts or almonds
2 tbsp poppy seeds

Instructions
Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
Whisk wet ingredients
In a large bowl, whisk eggs, olive oil, honey (or maple syrup), orange juice, zest, and vanilla until smooth.
Combine dry ingredients
In a separate bowl, mix flour, baking powder, baking soda, and salt.
Mix batter
Gradually add dry ingredients into the wet mixture. Stir until just combined (don’t overmix).
Fold in Greek yogurt and any optional add-ins.
Bake
Pour batter into the pan and bake for 35–45 minutes, or until a toothpick comes out clean.
Cool & serve
Let cool for 10–15 minutes before slicing.
🍯 Optional Healthy Glaze
Mix:
2 tbsp fresh orange juice
1–2 tbsp honey
Drizzle over the cake for a light, naturally sweet finish.
💡 Tips for Best Results
Use fresh orange juice and zest—it makes a huge difference
Don’t overbake—this keeps the cake soft and moist
Olive oil flavor varies—choose a mild extra virgin olive oil if you prefer a lighter taste

Black Forest Chia Pudding

Ingredients:
2 tablespoons chia seeds
1 cup milk of choice
1 tablespoon cocoa powder
½ teaspoon vanilla extract
1–2 teaspoons maple syrup
½ cup cherries (fresh or thawed frozen, chopped)
Optional: coconut whipped cream


Instructions:
1. In a bowl, whisk together milk, cocoa powder, vanilla, and sweetener until smooth.
2. Stir in chia seeds and mix thoroughly.
3. Let sit for 10 minutes, stir again, then refrigerate for at least 4 hours or overnight.
Before serving, layer with cherries and top with coconut whipped cream if desired.

Health Benefits:
Cherries are rich in antioxidants and may help reduce inflammation and support sleep due to their natural melatonin content. Cocoa adds heart-healthy compounds.

Tilapia and Eggplant Sheet Pan Recipe

Flavor: Slightly sweet, umami-rich

Ingredients:
For the glaze:
2 tbsp balsamic vinegar
1 tbsp soy sauce (or coconut aminos)
1 tbsp olive oil
1 tsp honey or maple syrup
1 clove garlic, minced
For the sheet pan:
1 medium eggplant, sliced into ½-inch rounds or cubes
2 fish fillets (like salmon, cod, or tilapia)
grape tomatoes
1 white or yellow onion cut in large chunks.
1–2 tbsp olive oil
Salt & pepper

Instructions:
1. Preheat oven to 425°F and line a large sheet pan with parchment paper.
2. Mix the glaze:
3. In a small bowl, whisk together balsamic vinegar, soy sauce, olive oil, honey, and garlic.
4. Prep eggplant & veggies:
5. Toss eggplant, and veggies with olive oil, salt, and pepper.
Spread evenly on the sheet pan.
Roast first:
6. Roast eggplants 15 minutes to get them tender and slightly browned.
Add the fish:
7. Push veggies to the sides and place fish in the center.
8. Brush fish generously with the balsamic soy glaze.
9. Flip the eggplant. Lightly drizzle or brush some glaze over the eggplant too.
Finish roasting:
10. Return to oven for 10–12 minutes, until fish flakes easily and reaches 145°F internally.
Optional broil (for caramelization):
Broil for 2–3 minutes at the end for a slightly sticky, glazed finish.
