Chocolate Chip Cottage Cheese Muffins
Ingredients
- 1 cup blended cottage cheese
- 2 eggs
- ¼ cup maple syrup
- 1 tsp vanilla
- 1 cup oat flour
- 1 tsp baking powder
- ⅓ cup dark chocolate chips
Bake
- Blend Cottage Cheese
- Combine all ingredients in a bowl except chocolate chips and blend.
- Stir in chocolate chips, then spoon into muffin tin.
- Bake at 350°F for 18–22 minutes.
Mediterranean Shrimp with Feta & Tomatoes (Foil Packet)
This Mediterranean-style shrimp dish is bright, savory, and very simple to make. The garlic, lemon, olive oil, and herbs create a classic Mediterranean flavor, while the feta cheese melts slightly into the tomatoes, forming a rich sauce that coats the shrimp and vegetables. It works beautifully on the grill or in the oven.
Ingredients (Serves 2–3)
- 1 lb large shrimp, peeled and deveined
- 1½ cups cherry or grape tomatoes
- 1 zucchini, sliced into half moons
- ½ small red onion, thinly sliced
- ⅓ cup crumbled feta cheese
- 2 tbsp olive oil
- 3 cloves garlic, minced
- Juice of ½ lemon
- 1 tsp lemon zest
- 1 tsp dried oregano
- ½ tsp smoked paprika
- Salt and black pepper to taste
Optional Mediterranean Add-Ins
- Kalamata olives
- Artichoke hearts
- Fresh spinach
- Roasted red peppers
Instructions
1. Preheat
- Grill: Medium heat (375–400°F)
- Oven: 400°F
2. Make the Marinade
In a bowl mix:
- olive oil
- garlic
- lemon juice
- lemon zest
- oregano
- paprika
- salt and pepper
3. Assemble the Packets
- Lay out two large sheets of foil.
- Divide zucchini, tomatoes, and onion between packets.
- Place shrimp on top of the vegetables.
- Drizzle the marinade over everything.
- Sprinkle feta cheese on top.
4. Seal the Packets
Fold foil tightly to seal so the juices stay inside while cooking.
Cook
Grill:
Cook packets 10–12 minutes.
Oven:
Bake packets 12–15 minutes.
Shrimp should be pink and opaque when done.
Finish & Serve
Open packets carefully and top with:
- Fresh parsley or basil
- Extra lemon squeeze
- Optional drizzle of olive oil
Serve with:
- Orzo pasta
- Couscous
- Quinoa
- Warm pita bread
The tomatoes and feta create a natural Mediterranean sauce, so it’s perfect for spooning over grains.
Healthy Mango Cottage Cheese Cheesecake
Ingredients
Crust
- 1 cup almond flour
- 2 tbsp melted coconut oil or butter
- 1 tbsp maple syrup or honey
- Pinch of salt
Cheesecake Filling
- 1 ½ cups cottage cheese
- 4 oz cream cheese (optional but helps with texture)
- 1 cup mango puree (fresh or frozen mango blended)
- 1/4 cup maple syrup, honey, or monk fruit sweetener
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp lemon or lime juice
- 1 tbsp cornstarch or arrowroot powder
Optional Mango Glaze
- 1/2 cup mango puree
- 1 tsp honey or maple syrup
- squeeze of lime juice
Instructions
1. Make the crust
Preheat oven to 325°F (163°C).
Mix:
- almond flour
- melted coconut oil
- maple syrup
- salt
Press firmly into a lined 7–8 inch springform pan.
Bake for 8–10 minutes until lightly golden. Let cool.
2. Blend the cottage cheese
Add cottage cheese to a blender or food processor and blend until completely smooth. This step is important so the cheesecake becomes creamy instead of grainy.
3. Prepare the filling
In a bowl combine:
- blended cottage cheese
- cream cheese
- mango puree
- maple syrup
- vanilla
- lemon juice
Blend or whisk until smooth.
Add eggs one at a time, mixing gently.
Stir in cornstarch to help the cheesecake set.
4. Bake
Pour the filling over the crust and smooth the top.
Bake for 40–45 minutes until the edges are set but the center slightly jiggles.
Turn off oven and let the cheesecake sit inside 20–30 minutes with the door cracked.
Remove and cool completely, then refrigerate 4–6 hours or overnight.
5. Add mango topping
Mix mango puree, honey, and lime juice.
Spread on top of the chilled cheesecake and garnish with fresh mango slices if desired.
