Lemon Parmesan Garlic Pasta
Ingredients (2–3 servings):
6 oz whole wheat or chickpea pasta (spaghetti, linguine, or penne)
1 tbsp olive oil (or avocado oil)
3 garlic cloves, finely minced
Zest of 1 lemon
Juice of 1 lemon (about 3–4 tbsp)
1 cup plain Greek yogurt (for creaminess)
½ cup freshly grated Parmesan cheese
½ cup reserved pasta water (adjust as needed)
2 tbsp chopped fresh parsley or basil
Salt and black pepper to taste
Optional: a pinch of crushed red pepper flakes for heat
Instructions:
Cook the pasta:
Bring a large pot of salted water to a boil.
Cook pasta according to package directions until al dente.
Before draining, reserve about 1 cup of pasta water.
Make the garlic base:
In a large skillet, heat olive oil over medium heat.
Add minced garlic and lemon zest, sauté for 1–2 minutes until fragrant (don’t let garlic burn).
Create the creamy sauce:
Reduce heat to low.
Add Greek yogurt, lemon juice, and Parmesan to the skillet, stirring gently until combined.
Slowly add in reserved pasta water, a little at a time, until the sauce reaches a silky, creamy consistency.
Combine:
Toss cooked pasta into the skillet, coating well with the sauce.
Season with salt, black pepper, and optional red pepper flakes.
Finish & serve:
Sprinkle with fresh parsley or basil before serving.
Add an extra dusting of Parmesan and a squeeze of lemon if desired.
✨ Why it’s healthy:
Uses Greek yogurt instead of heavy cream → lower fat, higher protein.
Whole wheat or chickpea pasta adds fiber and nutrients.
Olive oil provides heart-healthy fats.
Lemon + garlic boosts flavor and antioxidants without extra calories.
