
Hey everyone! Hope your summer is going well. We’ve already made it mid-summer and it is going by so fast. I have some blogs included that I made in the past two weeks. These ones are mostly seasonal and I hope you enjoy! It isn’t that you always have to have any recipe rules and only eat at certain times a year. I definitely have smoothies and ice cream in the winter and soup in the summer. Cilantro Lime Shrimp
Zesty Cilantro Lime Marinade (Great for Chicken, Fish, or Shrimp)
Perfect for a fresh, vibrant, and slightly smoky flavor profile.
Ingredients:
* 1/4 cup olive oil
* 1/4 cup chopped fresh cilantro
* 2 limes, zested and juiced (about 1/4 cup juice)
* 2 cloves garlic, minced
* 1 tsp ground cumin
* 1/2 tsp chili powder
* 1 tsp sea salt
* 1/2 tsp black pepper
* (Optional: 1/4 tsp smoked paprika for extra depth)
Instructions:
* In a bowl, whisk together all ingredients.
* Add your protein (chicken, fish, shrimp) or firm vegetables (like bell peppers and onions for fajitas).
* Marinate chicken for 30 minutes to 2 hours. Fish and shrimp only need 15-30 minutes.
Peach and Blueberry Salad
2 cut peaches
1 cup blueberries
1/4 cup sliced almonds
Drizzle of sugar free maple syrup
Sprinkles of cinnamon
Toss and enjoy!
Peach, Chicken, and Greens Salad
Healthy Peach Protein Muffins
(No Refined Sugar) Makes: 10–12 muffins
Ingredients:
1½ cups whole wheat flour or regular flour (I usually use a combination of both.)
1 tsp baking soda
½ tsp cinnamon
¼ tsp salt
2 eggs
½ cup unsweetened applesauce or mashed banana
¼ cup honey or maple syrup
⅓ cup plain Greek yogurt
1 tsp vanilla extract
1½ cups fresh peaches, finely chopped
Instructions:
Preheat oven to 350°F (175°C). Grease or line a muffin tin. In one bowl, whisk flour, baking soda, cinnamon, and salt. In another, mix eggs, applesauce, honey, yogurt, and vanilla. Combine wet and dry ingredients. Fold in chopped peaches. Divide batter into muffin cups and bake 18–22 minutes. Healthy Highlight: Whole grains, low sugar, and protein from yogurt and eggs.

For the Love of Popsicles, by Sarah Bond. This is a fun summer book and I have tried a few recipes that have turned out great! I would say that most recipes have good nutritional value and CAN be low in calories and sugar. And honestly, there are a few recipes that are further from it, but at least it’s natural.

HomCom Electric Grill and Sandwich Maker. I personally have one of these and it works well! It opens up as a grill you can use on both surfaces, and you can also make grilled cheese, paninis, and quesadillas when you fold it in. It has an easy clean non-stick surface with a drip cup.
