Sweet Potato Cookies

🧡 Ingredients

  • 1 cup mashed sweet potato (well-cooked and mashed until smooth)
  • 1 cup almond flour (or sub: coconut flour below)
  • 1 egg (or 1 flax egg for vegan)
  • 1/4 cup coconut or olive oil
  • 3 Tbsp maple syrup or honey (natural sweetener substitute for sugar)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp baking powder
  • Pinch of salt

If you need NO sweetener added at all:

→ Replace maple syrup/honey with 2–3 extra tablespoons of mashed sweet potato plus 1–2 Tbsp applesauce.
(This gives slight natural sweetness without added sugars.)


🧡 Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the mashed sweet potato, egg, almond butter, vanilla, and maple syrup/honey (or applesauce).
  3. Add the almond flour, cinnamon, nutmeg, baking powder, and salt. Stir until a thick dough forms.
  4. Scoop tablespoons of dough onto the baking sheet and lightly flatten (cookies won’t spread on their own).
  5. Bake for 12–14 minutes, or until the edges are set and bottoms lightly golden.
  6. Let cool for 10 minutes on the pan before moving — they firm up as they cool.

Ovaltine Overnight Oats

Ingredients:

1 cup of oatmeal

1 cup of milk

2 tbsp ovaltine

2 tbsp PB or sunflower butter for added protein

optional fruit add on

Mix the first 3 ingredients and put in refrigerator overnight. This alone tastes great but you can add on for additional nutrients and flavor.

Strawberry Balsamic Salad

Mostly everything in this salad is in season now! Tastes great and is super nutritious!

Strawberry and Arugula Salad with Balsamic Glaze

Ingredients:

2 cups arugula

1 cup fresh strawberries, sliced

1/4 cup crumbled goat cheese or feta
1/4 cup of chopped onion

2 tablespoons chopped fresh parsley or mint

Balsamic glaze or vinaigrette

Instructions:

Toss arugula and strawberries in a bowl.

Sprinkle with cheese and herbs.

Drizzle with balsamic glaze before serving.

Nutritional perks: Arugula and parsley offer calcium and antioxidants; strawberries boost vitamin C and immune function.

Quinoa-Crusted Chicken Tenders

Quinoa-Crusted Chicken Tenders (Serves 3–4) Crunchy outside, juicy inside—these are a protein-packed, gluten-free alternative to breaded tenders.

Ingredients:

1 lb chicken tenders or sliced chicken breast

2 eggs, beaten (or plant-based milk for egg-free option)

1 cup cooked quinoa (slightly dried out or toasted for best texture)

1/2 cup grated Parmesan cheese (optional)

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Olive oil spray or light drizzle

Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it. Mix quinoa, Parmesan (if using), and seasonings in a shallow bowl.Dip chicken in egg, then coat in quinoa mixture, pressing gently. Arrange on baking sheet and lightly spray or drizzle with oil. Bake 20–25 minutes, flipping halfway, until golden and cooked through. Optional: Air-fry at 380°F (193°C) for 12–15 minutes for extra crispiness. Nutrition Benefits: High-protein, gluten-free, with complex carbs and a crisp, satisfying coating.
