Honey Citrus Dressing


3 tbsp orange juice
1 tbsp lemon juice
¼ cup olive oil
1 tsp honey
½ tsp salt

Teriyaki Glazed Salmon

Ingredients:

2 salmon fillets

3 tbsp low-sodium soy sauce

3/4 cup of pineapple

1 tbsp honey

1 tsp sesame oil

1 tsp ginger, grated

1 clove garlic, minced

1 tsp cornstarch mixed with 1 tbsp water

Instructions:

  1. In a small saucepan, mix soy sauce, honey, sesame oil, ginger, and garlic. Heat and stir in cornstarch mixture until thickened.
  2. 2. Brush half the sauce over salmon fillets. Bake at 375°F (190°C) for 12-15 minutes. Drizzle with remaining sauce.

Garlic Butter Shrimp Pasta (with Regular Noodles)

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 8 oz spaghetti or linguine (or any pasta of choice)
  • 2 tbsp avocado oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup vegetable or chicken broth
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup grated Parmesan (optional)
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Cook pasta according to package instructions, then drain and set aside.
  2. Heat avocado oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds.
  3. Add shrimp, cooking for 2–3 minutes per side until pink. Remove from the pan.
  4. Lower heat, add butter, broth, and red pepper flakes. Stir for 1 minute.
  5. Toss in the cooked pasta, coating it in the sauce. Add shrimp back in.
  6. Season with salt and pepper. If using, sprinkle with Parmesan and fresh parsley before serving.

Yogurt Apple Cake

Ingredients:
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup coconut oil or unsweetened applesauce
1/2 cup honey or maple syrup
2 eggs
1 cup Greek yogurt
1 teaspoon vanilla extract
1 1/2 cups chopped apples (peeled)
Instructions:
Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
In another bowl, mix coconut oil/applesauce, honey/maple syrup, eggs, yogurt, and vanilla.
Gradually add dry ingredients to wet ingredients, stirring until just combined.
Fold in the chopped apples.
Pour batter into the prepared cake pan and spread evenly.
Bake for 30-35 minutes until a toothpick inserted comes out clean.

Raspberry Scones

🍓 Gluten-Free | Low-Carb | Naturally Sweetened
Ingredients:

2.5 cups almond flour
2 eggs
3 tbsp honey or maple syrup
½ tsp baking soda
¼ tsp salt
½ cup fresh or frozen raspberries
½ tsp vanilla extract
1 tbsp coconut oil or butter, melted
1 tsp lemon zest (optional, for extra flavor

Instructions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, mix almond flour, baking soda, and salt.
In another bowl, whisk egg, honey, vanilla extract, coconut oil, and lemon zest.
Add the wet ingredients to the dry ingredients and stir until combined.
Gently fold in the raspberries (be careful not to crush them too much).
Shape the dough into a circle (about 1-inch thick) and cut into 6-8 wedges.
Place the scones on the baking sheet and bake for 20 minutes for smaller scones and 30 minutes for larger scones, or until golden brown.
Let cool before serving.
Tip: Drizzle with a simple glaze made from 1 tbsp coconut butter and 1 tsp honey for extra flavor!
