5 Fresh and Healthy August Recipes You’ll Love

August is one of the best times of the year to enjoy fresh, locally grown fruits and vegetables. Farmers’ markets and grocery stores are overflowing with sweet corn, juicy melons, ripe raspberries, flavorful eggplant, and fragrant herbs. Eating seasonally not only provides the freshest flavors but also helps you take advantage of produce at its nutritional peak.

Mexican Street Corn Salad

Fresh sweet corn reaches its peak during August, making it the perfect base for this healthier take on the classic Mexican street corn. Greek yogurt adds creaminess while keeping the salad lighter than traditional versions.

Ingredients

  • 5 ears corn, grilled and kernels removed
  • ¼ cup plain Greek yogurt
  • 2 tablespoons mayonnaise (or additional Greek yogurt)
  • ¼ cup crumbled cotija cheese
  • 2 tablespoons chopped cilantro
  • 1 jalapeño, minced
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste

Directions

  1. Grill the corn until lightly charred.
  2. In a large bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, smoked paprika, salt, and pepper.
  3. Fold in the grilled corn, jalapeño, cilantro, and cotija cheese.
  4. Refrigerate for about 20 minutes before serving.
  5. Garnish with extra cotija cheese, cilantro, and a sprinkle of chili powder.

Grilled Eggplant Parmesan Stacks

Eggplant is abundant in August and is delicious when grilled. These layered stacks deliver all the comforting flavors of eggplant Parmesan with less oil and a beautiful presentation.

Ingredients

  • 2 medium eggplants, sliced into ½-inch rounds
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • 8 ounces fresh mozzarella, sliced
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves
  • Italian seasoning
  • Salt and pepper

Directions

  1. Brush both sides of the eggplant slices with olive oil and season with Italian seasoning, salt, and pepper.
  2. Grill for 3–4 minutes per side until tender.
  3. Layer one slice of eggplant with marinara sauce, mozzarella, and fresh basil.
  4. Repeat the layers and finish with grated Parmesan.
  5. Bake at 400°F for 12–15 minutes until the cheese is melted and bubbly.
  6. Garnish with fresh basil before serving.

Summer Melon Salad with Honeydew, Watermelon, and Cantaloupe

Few things are more refreshing than ripe melon on a hot August day. This colorful salad combines three varieties of melon with cucumber, feta, and a bright lime dressing for the perfect summer side dish.

Ingredients

  • 2 cups watermelon cubes
  • 2 cups cantaloupe cubes
  • 2 cups honeydew cubes
  • ½ cup cucumber, thinly sliced
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped fresh mint

Dressing

  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Pinch of sea salt

Directions

  1. Place the watermelon, cantaloupe, honeydew, and cucumber in a large serving bowl.
  2. Whisk together the olive oil, lime juice, and sea salt.
  3. Pour the dressing over the fruit and gently toss.
  4. Sprinkle with feta cheese and chopped mint before serving.
  5. Serve chilled.

Raspberry Lemon Oat Breakfast Bars

  5. Bake at 350°F for 35–40 minutes.
  6. Allow the bars to cool completely before slicing.

Lemon Balm Blueberry Iced Tea

Lemon balm is a fragrant herb with a mild citrus flavor that pairs beautifully with blueberries and fresh lemon. This naturally refreshing drink is sweetened with a sugar-free alternative, making it perfect for warm August afternoons.

Ingredients

  • 2 cups fresh lemon balm leaves
  • 4 cups boiling water
  • 1 cup fresh blueberries
  • Juice of 1 lemon

Directions
