Coconut Lime Chicken
Ingredients (Serves 4)
For the Chicken:
1.5–2 lbs chicken breasts or thighs
1 tbsp olive oil or coconut oil
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp paprika
For the Coconut Lime Sauce:
1 tbsp butter (optional for richness)
3 cloves garlic, minced
1 cup canned coconut milk (full fat or light)
Zest of 1 lime
Juice of 1–2 limes (adjust to taste)
1–2 tsp honey or a sugar-free sweetener
1 tbsp soy sauce or coconut aminos
¼–½ tsp red pepper flakes (optional)
Fresh cilantro for garnish
Instructions:
Season the chicken with salt, pepper, garlic powder, and paprika.
Heat oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden. Remove and set aside.
In the same skillet, add butter and garlic. Sauté 30–60 seconds until fragrant.
Stir in coconut milk, lime zest, lime juice, soy sauce/coconut aminos, and sweetener. Bring to a gentle simmer.
Return chicken to the skillet, reduce heat, cover, and simmer 10–15 minutes until chicken is cooked through and sauce is slightly thickened.
Taste and adjust:
More lime → add juice
More creaminess → add coconut milk
More savory → add coconut aminos
Garnish with fresh cilantro and serve.

Healthy Low Sugar Chocolate Cheesecake
Ingredients (Serves 8–10)
Crust (optional, slightly healthier version)
1 cup almond flour (or finely ground oats for nut-free)
2 Tbsp cocoa powder
2 Tbsp melted coconut oil or butter
1–3 Tbsp sugar substitute of choice (erythritol, monk fruit, or allulose)
Pinch of salt
(You may also skip the crust entirely for a lower-carb version.)
Cheesecake Filling
16 oz (2 bricks) reduced-fat or full-fat cream cheese, softened
1 cup plain Greek yogurt (2% or whole milk works best)
½ cup unsweetened cocoa powder
½–¾ cup sugar substitute (adjust based on sweetness level of substitute)
2 large eggs
2 tsp vanilla extract
¼ tsp salt
Instructions:
Prepare the oven
Preheat oven to 325°F (165°C).
Line the bottom of an 8–9 inch springform pan with parchment paper. Lightly grease the sides.
Make the crust (optional)
In a bowl, mix almond flour, cocoa powder, coconut oil, sugar substitute, and salt until crumbly.
Press firmly into bottom of the pan.
Bake 8 minutes, then cool while preparing filling.
Make the filling
In a large bowl, beat cream cheese with a hand mixer until smooth.
Add yogurt, cocoa powder, sugar substitute, vanilla, and salt. Mix until combined and no dry cocoa powder remains.
Add the eggs one at a time, mixing on LOW speed to avoid incorporating air (this keeps it creamy and prevents cracking).
Bake
Pour filling into the pan and smooth the top.
Bake 45–55 minutes, or until edges are set but the center still has a slight jiggle.
Turn off the oven, crack the door, and let the cheesecake cool inside 30 minutes to prevent cracking.
Chill
Cool completely at room temperature, then refrigerate at least 4 hours or overnight.
Healthier Topping Ideas (optional)
Fresh berries (raspberries or strawberries pair well with chocolate)
A drizzle of melted 85% dark chocolate
Unsweetened whipped cream with a touch of monk fruit
Dust cocoa powder and sprinkle toasted nuts
