Hey everyone! To those in the US, I hope your 4th of July went well! To everyone else, I just hope you are living healthy and well in general! This summer is more than halfway over now. I think I prefer the super hot over the super cold and it definitely gets super cold in the Pittsburgh wintertime. I sweat often, but I don’t mind too much because I feel like I’m getting a good detox in. I can always clean up and shower later. I hope you are still finding ways of staying fit and active in this heat. Most people have gym memberships to enjoy the air conditioning. Anyway, here are my recaps of the past few weeks. I hope you enjoy the recipes if you aren’t already following me on social media.

Lemon Herb & Garlic Sheet Pan Chicken and Veggies
This is a versatile and universally appealing option that keeps things fresh and light.
Ingredients:
3 tbsp olive oil
2 tbsp fresh lemon juice
1 tbsp dried Italian herbs (or 1 tsp each of dried oregano, basil, thyme)
2-3 cloves garlic, minced
1/2 tsp salt (or to taste)
1/4 tsp black pepper (or to taste)
Optional: 1 tsp honey or maple syrup for a touch of sweetness to help caramelize the sweet potatoes.
How to Use:
In a large bowl, whisk together all marinade ingredients.
Add the cubed chicken, sweet potato chunks, onions, and sliced green bell pepper.
Toss everything well to coat evenly.
For best flavor, let it marinate for at least 20-30 minutes, or up to 4 hours in the refrigerator. If you’re short on time, you can toss and roast immediately.
Spread in a single layer on a sheet pan and roast until chicken is cooked through and vegetables are tender.
Tropical Delight Ice Cream
1 16 oz bag of frozen bananas or 4 frozen bananas
1/2 cup of full fat coconut milk
1 can of pineapple chunks
1/4 cup of sliced almonds
3 tbsp shredded coconut
Add almost everything to the blender. Only add half of the can of pineapple and 2 tbsp of shredded coconut. After blending. Add the almonds, 1 tbsp coconut, and the other 1/2 of the pineapples. You can stir in or use as a topping. It is your own choice to eat as is or allow it to freeze for a harder and thicker texture. Enjoy!!!!
